On a brisk day, there's nothing more soothing than making a soup that just makes you cozy inside. It's the perfect fall comfort food. The great thing about this butternut squash soup recipe too is that it happens to be naturally gluten-free and vegan
Let's get cooking....
Prep time: 15 minutes
Cook time: 25 minutes
Servings: 4 people
Ingredients:
Rice
-
2 cups of white or jasmine rice
-
1 onion peeled and diced
-
1 tbsp Phileos of Sparta Extra Virgin Olive Oil
- 2 cloves of garlic minced
-
2 bay leaves
-
1 vegetable cube
- 2 medium potatoes chopped
- 2 cups of vegetable stock
- 1 cup of water
Pork Loiin
-
1 pounf of pork loin cut into cubes
-
1 onion peeled and riced
- hot pepper sauce
-
1 tsp garlic powder
-
1 tsp paprika
- 1 tsp sea salt
- 1/2 tsp Phileos Extra Virgin Olive Oil and more for drizzling
- 1 can (540ml) lentils, rinsed & drained
- 1 tsp parsley

Directions:
Rice
Step 1: In a pot, saute diced onion in olive oil until softened
Step 2: Add rinsed rice to pot and stir for a minute
Step 3: Add stock, water, bay leaves, vegetable cube, salt & pepper
Step 4: Cook for about 15-20 minutes or unitl rice is cooked
Pork Loin
Step 1: In a bowl, combine pork chunks with pepper sauce, garlic, paprika, salt & pepper
Step 2: In a pan, add olive oil and onion. Cook until softened. Add your pork and saute for about 8-10 minutes or unilt cooked through.
Step 3: Add rinsed lentil and combine with meat until heated through
Step 4: Drizzle olive oil over top
Step 5: Sprinkle with parsley
Serve ove rice. Enjoy!
