This quick braised Chicken Fillets with Eggplant and Olives recipe is going to be on repeat for dinner on nights when you want a delicious healthy meal, but don’t feel like investing too much time with hands on cooking. It’s hearty and comforting and customizable based on what you have on hand. It’s gluten-free, low-carb and Paleo and Whole30 friendly.

Ingredients:
For the roasted mushrooms

1/2 cup Phileos of Sparta Premium Extra Virgin Olive Oil

4 chicken fillets

1 cup white wine
-
3 bell peppers (green, red and orange) thinly sliced
- 1 eggplant, thinly sliced
- 2 zucchinis, thinly sliced
- 2 onions, finely chopped
- 4-5 basil leaves, finely chopped
- 1 garlic clove minced
- 1 sliced apricot
- 2 tbsp, Sparta Groves Pitted Kalamata Olives
Directions:
Step 1 Heat oil in a skillet
Step 2 Season the chicken fillets with sea salt and pepper. Add to the skillet.
Step 3 Brown for 4 to 5 minutes then add the white wine.
Step 4 Add vegetables, onion, basil, garlic and Sparta Groves Pitted olives.
Step 5 Season slightly with salt and pepper and let cook for 7-8 minutes.
Step 6 Serve hot.
