CAN I COOK WITH EXTRA VIRGIN OLIVE OIL?
I have been asked time and time again by friends if they should use a good quality Extra Virgin Olive Oil for their daily cooking needs. My response has always been ABSOLUTELY! The Mediterranean countries have been cooking with EVOO for hundreds of years. You should immediately begin substituting all oils and butters for cooking with Extra Virgin Olive Oil. The taste is fabulous and so much superior to all of the other oils such canola, soybean and any other refined oils, not to mention your heart will also thank you!
You can use Extra Virgin Olive oil with all of your recipes including baking bread, eggs, French fries roasted potatoes. and well you get the idea. It is an excellent and much healthier and excellent alternative to butter and margarine.
Extra Virgin Olive oil is full of polyphenols and healthy monounsaturated fats which adds flavour to your meals and establishes a balanced diet.
IS THE SMOKE POINT OF EVOO APPROPRIATE FOR FRYING FOODS?
On average, 350 degrees Fahrenheit is required for most of our frying. Extra Virgin Olive Oil has a smoke point of approximately 410 Fahrenheit which is well above the norm we are all accustomed to. The traditional oils used for cooking (canola, corn and soybean oils) are much less stable than our Phileos EVOO due to their high acidity (low grade oil), lack of many polyphenols which ultimately break down into to toxic by-products due to high temperatures. This is not the case with Extra Virgin Olive Oil which is stabilizes fats when heated.
Below I have provided a substitution conversion chart which outlines how much EVOO you should use in lieu of butter or margin.
