High Phenolic Extra Virgin Olive Oil
Health Claim for polyphenols has revolutionized the olive oil business by offering a distinct and measurable health benefit of each olive oil. It is no longer the level of the acidity that is the key criteria for quality of olive oil; the type and concentration of phenolic compounds in olive oil and olives is the new benchmark of quality. North Americans until this day have mistakenly assumed that "taste" was the only primary determinant of a superior quality EVOO. Taste is subjective (Phileos has fantastic taste), however quality of product is not!
High Quality Oil
The different categories of olive oils are graded according to quality parameters relating to the physical and chemical features and the organoleptic (sensory) features. High quality olive oil is commonly defined as oil with low acidity, high content of polyphenols and good flavour. It is not easy to have all parameters well balanced, but Phileos achieves this magnificently.

Famed British Chef and TV personality Gordon Ramsay has declared that Greek Food is his most favourite cuisine in the world because of the ingredients used. The mainstay of this cuisine is... you guessed right - Extra Virgin Olive Oil. In London the Michelin-starred chef visits Greek restaurants regularly as he is a big fan of Greek eats and ingredients. Chef Ramsay also states there is no coincidence that people in Greece live well into their 90s. His good friend and travel companion maître d' Fred Sirieix agrees with him wholeheartedly.
Single-Origin Olive Oil
We're proud to produce single-origin extra virgin olive oil with a production date on every bottle. Most other olive oil manufacturers use different batches of oil from separate regions and put expiration dates on the label instead of production dates. This is a warning sign that the oil is not of superior quality, With Phileos, you'll always know exactly when and where your olive oil was made.
Olive Varieties Used
Phileos Evoo is produced exclusively from the famous Athinolia (cultivar exclusively found in the Municipality of Monemvasia, Laconia) and Koroneiki varieties in certified fields that carry the PGI of Laconia, Greece. Phileos EVOO Organic is made with the Koroneiki variety on fields inspected and certified by Bio Hellas. When Koroneiki and Athinolia olives are mixed they produce a full-body extra virgin olive oil of a balanced and intricate fruity flavour.
The Athinolia is of excellent quality with low acidity and rich flavour. Its characteristics are impressive. It has been recognised as having the highest content of total polyphenols than any other olive variety and thus superior. It is an early harvest olive and the first to be collected. The Athinolia has heavy aroma characteristics with a rather low viscosity.
The Koroneiki olive cultivar is among the finest of all varieties in terms of taste and health benefits. Koroneiki olives are harvested while they are still green to produce the highest quality of olive oil. It has an intense scent and sharp flavour. Their trees have no artificial additives interventions and they are always kept small in size, to produce the tiny amount of 3 to 5 litres of Phileos of Sparta olive oil per tree. Elsewhere around the world, the usual oil yield per tree is 10 litres.
The olives are harvested, extracted and packed under strict conditions that ensure its freshness and nutritional value.
We use anywhere from 20,000 - 32,000 olives in order to produce 4.0 litres of our Extra Virgin Olive Oil. Each Phileos olive tree usually produces 3.0 - 4.0 litres of EVOO per year. Therefore, that's essentially six to eight 500ml bottles of Extra Virgin Olive Oil per olive tree per year. This translates into approximately 5 - 8kg of olives or 5,200-8,000 olives being used to manufacture one litre of our EVOO.
Source and Methods of Our Artisans
Phileos olive oil is sourced from our family owned farms by growers who value ancient techniques of growing, harvesting and processing. We insist on the usage of traditional production methods only. This know how and expertise is integrated with the use of modern technology to ensure the quality, delicate flavours and amazing health benefits of our nutritional and medicinal grade Evoo. The knowledge and skill possessed by our growers render the produced olive oil truly exceptional.
The olives are harvested directly from Phileos olive orchards with great care and immediately placed in baskets. "This undertaking is akin to a surgeon operating on their patient". The picked olives are then cold extracted hours after the harvest. The oil is then processed under strictly controlled conditions in our own olive mill located in Aggelona, Monemvasia and then packed by our world class bottler KASELL SA with certificates of quality accompanying the product. Our premium EVOO which has been bottled in our processing plant is ready for consumption, and then offered to retail always with the current year harvest.
We only sell the current year's harvest. As you are reading this, the first olives of the 2023 season's harvest have been picked from the trees and the resulting fresh batch of olive oil is being prepared for shipment. We are excited to have our products on retail shelves near you soon!
"Caveat Emptor"
We conduct all of our business based on the principles of honesty and trust. This is our foremost priority which builds client loyalty. A number of leading olive oil exporting countries import as much as 70% of their oil from other countries and then stamp it with "bottled in ..... " or "packed in ..... " when it is actually sourced from other countries abroad.
Moreover, the majority of olive oil brands you purchase from retail grocers in both Canada and the United States follow the same practice by purchasing their oil from many sources, blending it with other oils and then claiming it as their own. This is very misleading to consumers and frowned upon by our company as it is disingenuous.
PGI of Laconia
All of our Extra Virgin Olive oil is DIRECTLY sole sourced from the same Phileos olive mill plant. We know from which trees and each locale the olives were picked from. Our product is the "real deal" when it comes to artisanal produced Extra Virgin Olive Oil.
Phileos Premium EVOO carries the Protected Geographical Indication -PGI of Laconia status as designated by the European Union. It recognizes that the product has unique properties and is manufactured within a specific geographic region meaning Phileos is a traceable product. Thus, products that do not carry the PGI designation and claim to be produced in Laconia, Greece may in fact not be produced there but rather elsewhere.
There are a number of brands that attempt to purchase oil from well respected producers such as Phileos in order to obtain the PGI designation and quality of product. These private label brands then pass it off as their own olive oil "from their farms or their estates", when they are not even located in the specific region or possess farms with trees that can produce the volumes, not to mention the ability to manufacture a premium quality oil consistently such as Phileos.
They are all "selling" you the same old story. It is a marketing gimmick! The resellers do not have their own large quantity of olive oil available or capacity to supply the large tonnage in order to satisfy the retail space. We will NEVER face this problem as we ONLY sell our own oil and are able to do so because we are one of the few vertically integrated EVOO companies in the world. Other olive oil re-packagers call every available external supplier to buy oil when they run out, and then package it under their own private label. They also pay more for the oil and pass it on to the consumer. It is extremely difficult to source great quality EVOO and the required supply. Phileos has first hand knowledge of this and is well aware of this practice! This is because everyone calls us looking to purchase our EVOO.
Consumers get EXACTLY what Phileos purports and will never second guess its quality, origin or whether the oil has been adulterated. We are an ACTUAL producer of superior quality olive and not a BUYER or RESELLER of someone else's oil.
Quality Control
Phileos has full custody of our oil from when handpicked olives are first harvested by artisans on our family owned Greek olive orchards. The olives are then sent to our sophisticated and upgraded olive oil mill in Aggelona, Monemvasia only hours after they are picked. They are then carefully pressed (crushed) cold under 25.6 °C (78 °F) without any chemical processing, additives, or preservatives. Once this is completed, we forward the "liquid gold" to our standardization facility KASELL SA where our master millers "Giorgos" and "Makis" take care of the rest. This allows our own world class bottler to control and safeguard the quality of the final product throughout all stages of the production process. until it ultimately reaches our retail partners.
Phileos never mix blends or adulterates its oil. This would not be in keeping with the traditions of our Greek ancestors and their methods of oil production.
Consistently Excellent
The majority of Extra Virgin Olive Oil producers around the world cannot achieve the consistently higher quality in significant volumes as Phileos. This means that we are able to make our excellent EVOO available to more consumers in the retail space. We just do it right and pride ourselves in that - never compromising quality at any step in the production of our olive oil. The olive oil brands that consumers are accustomed to buying today simply could never produce the superior quality of oil that Phileos can, because they don't have the scale. They instead buy olive oil from other external non indigenous suppliers to fill the gap.
People need to taste truly fresh oil. We believe most people are used to an oil that is not fresh, and that’s what they think it should taste like. There’s a high-quality product available at the same price - Phileos. Extra virgin olive oil has a special flavour and freshness. Once people taste fresh extra virgin olive oil, they’ll want to continue choosing it.

Phileos of Sparta owns its bottling unit KASELL SA that has been recognised internationally as world class. This ensures the final product is prepared in accordance with international packaging standards, standardization and labelling outlined below. We adhere to the strictest standards of food preparation found in the world. Another clear advantage of our ownership is that it enables us to control the entire manufacturing and distribution of our oil.
Phileos is ISO:22000 certified for our olive mills. The implementation of this standard is a guarantee both for the security, hygiene and traceability of our produced olive oil and the protection of the unique natural environment, wherein our families live and work.
The olive oil’s bottling in its turn is effectuated according to the international standards ISO 22000 & IFS Food for the safeguard of the quality of the product that is offered to the consumer in its final form.
It is also noteworthy that Phileos' KASELL SA produces and standardises organic extra virgin olive oil, which is certified by the competent and strictest certification bodies in the world.
Benefits and Uses of EVOO
Our Evoo is produced using a natural extraction process without the use of heat or chemicals. This allows the oil to retain all the nutrients and antioxidants from the olive fruit. As a result, extra virgin olive oil is regarded as the highest quality olive oil available.
Extra Virgin Olive Oil is a versatile monosaturated fat that is the mainstay and main source of healthy fat in the Mediterranean diet. It displays a singular fatty acid composition with a higher content of phenolic compounds and other antioxidants than other edible oils. Phileos Greek Extra Virgin Olive Oil is rich with polyphenols and tocopherol (Viatamin E) which are powerful antioxidants.
You can use our Evoo for all types of cooking including baking and sauteing. Although many people cook or fry foods using corn, sunflower, or canola oil, these products are highly processed, oxidize easily, and are not considered as healthy as olive oil.
Phileos can also be used as a dip for bread (Just glorious!), drizzling on pasta or pizza or as dressing for salads and other colourful vegetables.
The consumption of Evoo has been demonstrated to play a protective role against diseases such as cancer, cardiovascular diseases, diabetes, and neurodegeneration.
